Recipe 3: Broccoli with Garlic Sauce

As I further read the broccoli recipe, I decided that I did not totally agree with it. Just pour the sauce on top? Only one clove of garlic? No salt? Strain it? Not in my house. Since when is topping something with a sauce—barring certain desserts—better than cooking it in the sauce? Almost never.

I made the sauce with two cloves of garlic, and let it simmer for 15 minutes. Then I added heavy cream and the broccoli, and let it cook together, covered, for 20 minutes…

While it had a funny smell, it ended up being super tasty.

The Recipe! (4 Servings)

What you need:

  • 1 cup chicken stock
  • 1 cup water
  • 1 bay leaf
  • 1 teaspoon salt
  • 1 teaspoon black pepper*
  • 1 teaspoon oregano*
  • 2 cloves garlic
  • ¼ cup heavy cream
  • 1 head of broccoli, cut into small florets
  • 3 green onions, chopped

*I used Cavender’s Greek Seasoning, but this isn’t available in China, so pepper and oregano are decent substitutes

What to do:

  1. Mix everything but cream and broccoli in a saucepan
  2. Simmer on low heat for about 10 minutes
  3. Add cream and broccoli
  4. Cover and simmer for 10 minutes on the lowest setting, followed by 10 minutes on low, stirring occasionally
  5. Enjoy!
